Madrid, 23 July 2026.- According to INFORMA's (Cesce's subsidiary) DBK Sectoral Observatory—a leading provider of business, financial, sectoral, and marketing information in Spain and Portugal—the value of the industrial bakery and pastry market recorded growth again in 2025, although below the increases seen in previous fiscal years, as some products reached maturity. Even so, demand continued to develop positively, bolstered by the launch of new products, particularly those with healthier and more sustainable ingredients and tailored to consumer tastes.

As a result, the total market value stood at €6.15 billion in 2025, up 3.7% from 2024, when it had grown 5.5%.

By segment, the value of domestic sales of frozen dough rose 4.2% to €2.38 billion, accounting for around 39% of the total market. Next came bakery sales of €1.345 billion, which, after rising 3.9%, represented 22% of the market.

Sales of biscuits reached €1.265 billion and a share of nearly 21%, while pastries and sweet bakery products totalled €1.16 billion, representing 19%. Both segments posted annual growth of around 3% in 2025.

As regards foreign trade, export value increased 10.7% in 2025 to above €2.2 billion. Imports, meanwhile, stood 11.6% above 2024, at €1.15 billion. As a result, the trade balance surplus exceeded €1 billion.

The sector's supply is made up of around 200 manufacturing and importing companies with significant activity, with privately owned Spanish shareholdings predominating. However, the largest operators also include subsidiaries of multinational groups and companies backed by foreign investment funds.

The sector is showing a trend towards increasing concentration, driven by stronger growth among the leading operators and company acquisitions carried out by some of them. In 2025, the top five operators reached a combined market share of over 45%; the top ten, over 65%.
